Ingredients:
• Chicken Breast (1 lb. with no
bones or skin, cubed into 1 inch)
• Plain Yogurt (1 cup)
• Curry powder (1 tablespoon)
• Paprika powder (1/2 tablespoon)
• Fresh Garlic (1 tablespoon, minced)
• Fresh Ginger (1 tablespoon, minced)
• Wooden sticks (6, soak in water)

• Soy Sauce (3 tablespoons)
• Hot Sauce (1tablespoon)
• Fish oil (1 tablespoon)
• Chili Powder or paprika powder (1/2 tablespoon)
• Brown sugar (2 tablespoons)
• Fresh Garlic (1 tablespoon, minced)
• Fresh Ginger (1 tablespoon, minced)
• Fresh Cilantro (1/4 cup, minced)
• Fresh Lime (juices of 2 limes)
• Water (1/4 cup or 1/2 cup of water if you do not have soy milk)
• Soy milk (1/4 cup soy milk or use 1/2 cup of water if you do not have soy milk)
• Soy Sauce (3 tablespoons)
• Hot Sauce (1tablespoon)
• Fish oil (1 tablespoon)
• Chili Powder or paprika powder (1/2 tablespoon)

• Fresh Cilantro (1/4 cup, minced)
• Fresh Lime (juices of 2 limes)
• Water (1/4 cup or 1/2 cup of water if you do not have soy milk)
• Soy milk (1/4 cup soy milk or use 1/2 cup of water if you do not have soy milk)
Instructions:
1) Soak wooden sticks in water for
about 30 minutes, so they do not burn over the hot grill.
2) In order to prepare the marinade
for the chicken, mix yogurt, curry, paprika, ginger, and garlic in a zip lock
bag. Add chicken cubes to marinade in zip lock bag, and let it sit for about 2
hours in the refrigerator.
3) in order to prepare the peanut sauce, place peanut butter in a bowl. Take all the peanut sauce ingredients and
mix with peanut butter until the texture of the peanut butter is silky smooth.
Add chopped cilantro right before serving sauce to give it a freshness.
4) On each wooden stick, which has
soaked for about 30 minutes, puncture and insert 4-5 pieces of the one inch
chicken cube onto each wooden stick. Even out the chicken on the wooden stick
where it is not too close to each other but not too far from each other, just
slightly touching each other is best.
5) Heat indoor grill and brush the
surface with oil so the chicken does not stick to the grill. (If you prefer to grill on
your outdoor grill, you may do so). Lay each stick of chicken flat on the grill and
cook each side for about 6 to 7 minutes each or until chicken is thoroughly
cooked. Grill marks usually indicate that it's done, but you can also press onto
the chicken. If there is a firmness to chicken, then it's done.
6) Put peanut sauce in a bowl, and
serve the chicken with the peanut sauce on the side.
This recipe serves about 4-6
